The de Moors planted this site in the mid-1990s. It has a cool northwest exposure and very shallow clay soils over solid limestone, which give the wine its freshness and minerality. This wine is 100% aligoté from a small, 2.5-hectare vineyard in the village of Chitry le Fort, just southwest of Chablis (the town).
The vineyard is organically farmed and always harvested by hand. In the cellar, the grapes are gently pressed and fermented with native yeasts, without any added sulfur. The wine spends about a year resting on its lees in enamel-lined steel tanks, gaining texture and depth. Bottling happens the following fall, with no fining or filtering, and only the smallest touch of sulfur to keep the wine stable.
