La Biancara is one of the pioneering estates of Italy's natural wine movement. Founded by Angiolino Maule in the late 1980s in the volcanic hills of Gambellara, the winery has become a benchmark for authentic, low intervention wines from Veneto. Maule is also the founder of the VinNatur association, which promotes environmentally responsible farming and transparent winemaking. Today he works alongside his sons, continuing to produce wines that highlight the unique volcanic terroir of Gambellara rather than cellar manipulation.
The estate farms its vineyards without synthetic herbicides or pesticides, focusing on healthy soils and biodiversity. The vines are planted on basalt rich volcanic slopes that naturally produce wines with striking minerality and freshness. Grapes are harvested by hand, fermentations rely on native yeasts, and the wines are bottled with little or no fining or filtration. Sulfur additions are kept to a minimum, allowing the vineyard character to take center stage.
Sassaia Bianco 2023 is the winery's flagship white, made from approximately 85% garganega and 15% trebbiano grown on the mineral rich hills of Gambellara. The wine ferments spontaneously in large neutral oak casks before aging for about ten months on its lees. It is bottled unfiltered, and part of the production is released without any added sulfur, resulting in a wine that is both expressive and remarkably pure.
The 2023 vintage is vibrant and layered, offering aromas of citrus, yellow apple, white flowers, herbs, and crushed stone. The palate is energetic and saline, combining bright acidity with a subtle texture from brief skin contact and lees aging. Dry, mineral, and exceptionally food friendly, Sassaia is a natural partner for shellfish, grilled fish, vegetable dishes, risotto, and aged cheeses.
