The grapes are all hand-harvested and are then fermented in stainless steel with complete temperature control, then the wines are racked into large wood barrels before being bottled. For this Barbaresco, several rackings will be done during the first year and thereafter the wines will remain in barrel for an additional 2 years without a racking. The Barbaresco is then bottled without filtration. This is a classic, old-school Barbaresco with all the good stuff—truffle, earth, wild berries, rose petals, a hint of tar, and a touch of leather. What really makes it stand out, though, is the smooth, dusty tannins that give it structure and a long, elegant finish.
