Champagne Ployez Jacquemart is a family owned house founded in 1930 in the Premier Cru village of Ludes in the Montagne de Reims. Now led by the third generation, the estate has built its reputation on producing elegant, low dosage Champagnes that emphasize freshness, precision, and the character of the terroir rather than richness from sugar. While the domaine owns a small vineyard of about three hectares, it also works with long standing grower partners in Premier and Grand Cru villages, allowing the house to source exceptional fruit while maintaining close oversight of quality.
From vineyard to cellar, the philosophy is one of minimal intervention. All grapes are harvested by hand and only the first press juice is used for the wines. Fermentations are carried out with traditional yeasts, and the wines undergo slow secondary fermentation in the house's deep, cool cellars to develop exceptionally fine bubbles. A hallmark of Ployez Jacquemart is its very low dosage, allowing the purity of the fruit and the natural minerality of the vineyards to take center stage. The wines are also aged extensively before release, often far longer than the minimum required by the appellation.
The Extra Brut Rosé is produced only in years when the quality of the black grapes meets the house's exacting standards. It is a blend of 55 percent chardonnay, 23 percent meunier, and 22 percent pinot noir, including a small portion of still red pinot noir from the Grand Cru village of Mailly. Rather than using the saignée method, the rosé is created through blending, giving the cellar team precise control over color, texture, and balance. The red wine component is aged in oak, adding subtle complexity without overshadowing the wine's freshness. The finished Champagne receives just 4 grams per liter of dosage.
This non vintage cuvée is bright, refined, and wonderfully food friendly. Aromas of wild strawberry, raspberry, cranberry, citrus peel, and rose petals lead into a palate that is both lively and layered, with delicate brioche notes from extended lees aging and a long mineral finish. It is equally at home as an aperitif or paired with tuna, salmon, duck breast, or soft cheeses, offering a beautifully balanced expression of modern, terroir driven Champagne.
