The base is primarily baga, Bairrada’s native variety, chosen here for its firm acidity and fine tannic backbone. After a gentle whole-cluster pressing and primary fermentation. After bottling, it undergoes extended aging on the lees without dosage — hence the “Extra Bruto” designation — which builds subtle texture without adding sweetness.
