Filipa Pato DNMC Baga 2025

Filipa Pato is one of the leading figures of contemporary Bairrada and comes from one of the region’s most important winemaking families. Her father, Luís Pato, was instrumental in restoring the reputation of Baga, while Filipa established her own project in 2001 after studying chemical engineering and gaining experience in Bordeaux, Argentina and Australia. She now works alongside her husband, Belgian sommelier and restaurateur William Wouters, focusing exclusively on indigenous Bairrada varieties and a restrained, terroir driven style of winemaking.

The vineyards are farmed biodynamically, with particular attention to biodiversity, living soils and the elimination of herbicides. Their baga parcels are scattered across several villages on Bairrada’s limestone rich soils, strongly influenced by the nearby Atlantic. Many younger plantings come from massal selections taken from the family’s century old baga vines, preserving genetic diversity rather than relying on standardized clones. The cooler maritime climate and limestone help moderate baga’s naturally powerful tannins while maintaining its characteristic acidity. 

The 2025 Dinâmica / DNMC is 100% baga assembled from several limestone vineyard parcels, each vinified separately before blending. The grapes are hand harvested and completely destemmed, then fermented in stainless steel with a long skin maceration but deliberately gentle extraction. Élevage is short and entirely in stainless steel, with no oak, followed by a brief period in bottle. The intention is a fresher, more immediately approachable expression of baga, emphasizing fruit and fine tannins rather than the formidable structure the variety can develop with heavier extraction and long aging.

The wine shows strawberry, sour cherry and damson plum with licorice, black pepper and subtle notes of bay, thyme and rosemary. The palate is juicy and energetic, with bright acidity, fine grained tannins and an almost velvety texture. It finishes fresh and lightly savory, with red fruit, herbs and a distinctly stony character.
