Ciavolich Cerasuolo d’Abruzzo 2025 comes from a historic Abruzzese estate with roots dating back to 1853, now run by Chiara Ciavolich and her family. Based around Loreto Aprutino, the winery farms a mix of hillside vineyards on clay-limestone soils, working with a range of native varieties but with a particular focus on Montepulciano, the region’s defining grape.
Cerasuolo, traditionally the everyday wine of Abruzzo, is made from 100% montepulciano but handled more like a white wine. At Ciavolich, fruit is harvested by hand and lightly crushed, with a short period of skin contact (around 8 hours) to extract color and a touch of structure before pressing. Fermentation and aging take place entirely in stainless steel, preserving freshness and avoiding any overt influence from oak.
The 2025 follows this classic approach. Rather than pushing extraction or weight, it leans into clarity and drinkability — a rosato with a bit more depth than typical pale styles, but still guided by freshness, moderate structure, and a clean, dry finish.
This is a straightforward, regionally rooted Cerasuolo — built on tradition, simple but deliberate winemaking, and the natural character of montepulciano handled with restraint.
