From Bodegas Lustau: Emilio Lustau Pedro Ximénez San Emilio is a classic expression of Spanish sweet sherry from Jerez de la Frontera, made entirely from Pedro Ximénez grapes. At Lustau, these grapes are laid out in the sun after harvest to dry and concentrate their sugars before fermentation is deliberately slowed and then fortified. The resulting wine is aged for about 12 years in the traditional solera y criaderas system, building richness without losing balance.
In the glass it’s very dark—almost ebony—with hints of iodine at the rim. The nose opens with dried fruit notes: figs, raisins, and dates, backed by subtle floral and citrus nuances. On the palate, the sweetness is front and center but supported by enough acidity to keep the richness in check; texture is smooth and velvety, and the finish lingers.
This sherry isn’t so much a background pour as it is a dessert in itself. It pairs naturally with rich sweets, blue cheeses, or even a scoop of vanilla ice cream, and can work as a digestif to close a meal.
