“Maischevergoren” translates roughly to “skin fermented,” referring to the wine’s extended contact with grape skins during fermentation. The wine is made primarily from aromatic white varieties grown on limestone and schist influenced soils, with fermentation taking place spontaneously using indigenous yeasts. Rather than pressing the grapes immediately as in conventional white winemaking, the juice remains on the skins for an extended period in order to build texture, structure, and savory complexity.
Aging takes place in large neutral vessels with minimal sulfur additions and little intervention throughout élevage. Tschida avoids overt oxidation or excessive extraction, aiming instead for balance and clarity within the skin contact style. The result is less about heaviness and more about texture, energy, and subtle grip.
