Gassan Mountain Moon junmai ginjo comes from Yoshida Sake Brewing in Shimane Prefecture, a rural area of western Japan known for soft water, mountain terrain, and a quieter, more traditional approach to sake production. The brewery has long focused on careful small scale brewing, aiming for balance and texture rather than highly aromatic or aggressively polished styles.

This bottling is made in the junmai ginjo style, with the rice polished to remove a significant portion of the outer grain while still retaining enough structure and character to support food pairing. No distilled alcohol is added, keeping the emphasis on the interaction between rice, koji, water, and fermentation. The brewery uses cool, slow fermentations to build clarity and aromatic lift while maintaining a composed, understated profile.

The name Mountain Moon reflects the brewery’s connection to the surrounding landscape and the softer, more contemplative style the sake is intended to convey. Compared to more modern fruit driven junmai ginjo bottlings, Gassan tends toward subtlety and balance, with texture and structure carrying as much importance as aroma.

The sake leans toward pear, melon, steamed rice, and faint floral notes, supported by gentle acidity and a clean, mineral finish. Its moderate weight and restrained profile make it particularly versatile with food, especially seafood, lightly seasoned dishes, and traditional Japanese preparations.
