Ravines Finger Lakes Cabernet Franc 2021
100% estate, sustainably grown Cabernet Franc from our White Springs and 16 Falls Vineyards. Incredibly fresh and inviting with aromas of redcurrant, cranberries and mountain herbs. The palate is pure and elegant, with notes of raspberries and hints of earth and spice. A perfect rendition of Finger Lakes Cabernet Franc, aged for a year in our 6-year-old, 2000 liter Austrian and Hungarian Oak casks.
A flourishing partnership steeped in food and wine. Morten grew up on a renowned winery, Domaine de Castel Roubine, surrounded by estate vineyards in the prestigious Côtes de Provence wine region of France. He arrived in the Finger Lakes wine region with an Enology and Viticulture degree from one of Europe’s finest schools and valuable experience at renowned wineries including Cos d’Estournel in Bordeaux.
Working as head winemaker for a major Finger Lakes winery for six years, Morten collaborated with grapes sourced from vineyards across the Finger Lakes wine country. He noticed a gap in the market: few producers were crafting truly dry Riesling wines. Many Rieslings labeled “dry” were in fact quite sweet, masking the region’s unique minerality and terroir-driven characteristics. Inspired by this, he identified two exceptional vineyard sites — the Argetsinger Vineyard and 16 Falls Vineyard — and began producing a distinct style of mineral-driven Finger Lakes wines from these sites, starting in a rented barn on Keuka Lake.
