The wine reflects Oregon’s cool climate particularly well, with the bright acidity and fresh berry character that make gamay such a natural fit for the region. At harvest, the fruit came in at 22.8 Brix with a pH of 3.28, giving Sass plenty of natural acidity to work with. The finished wine was bottled at 13.4% alcohol, retaining the freshness that is central to the style.\u003c\/p\u003e\n\u003cp\u003eThe winemaking is particularly distinctive. The whole clusters were lightly crushed and left in the press for several hours before being pressed and fermented at a remarkably cool 38°F for two months. This slow, cold fermentation helps preserve the wine’s vivid fruit and aromatic freshness rather than pushing the extraction or weight of the wine. It was bottled on April 16, 2023, just several months after harvest, with 263 cases produced. The approach is refreshingly straightforward, with the emphasis firmly on preserving the character of the fruit.\u003c\/p\u003e\n\u003cp\u003eIn the glass, the wine shows ripe cranberry, wild strawberry and Montmorency cherry, with a juicy berry quality carrying through to the finish. There is a lovely tension between the bright acidity and generous fruit, giving it more substance than a simple, light bodied gamay while keeping it exceptionally fresh and easy to drink.
