Thymiopoulos is one of the producers most responsible for reshaping how the wine world views xinomavro and the broader Naoussa region of northern Greece. Apostolos Thymiopoulos took over his family’s vineyards in the early 2000s and quickly moved toward organic farming, native yeast fermentations, and a far less extracted style than was historically common in the region. His wines helped shift xinomavro away from being seen as a severe, heavily tannic grape and toward something more aromatic, transparent, and site driven. Even the rosé wines are approached with the same seriousness and sensitivity as the reds.

Rosé de Xinomavro 2024 comes from organically farmed vineyards around Naoussa at elevations that help preserve freshness despite the warm Macedonian climate. Rather than treating xinomavro as simply a red grape used for rosé production, Thymiopoulos leans into the variety’s naturally high acidity, savory herbal character, and subtle tannic structure. The wine is intentionally built more like a delicate, lightly structured table wine than a simple fruit driven summer rosé.

In the cellar, the fruit sees a short maceration before fermentation with indigenous yeast in stainless steel. The handling is gentle, preserving aromatic lift and texture while avoiding overt extraction or heaviness. Aging remains entirely in stainless steel to keep the wine focused on freshness and minerality, though the natural grip of xinomavro still comes through subtly on the palate. Sulfur use is minimal and the overall style stays very much aligned with Thymiopoulos’ low intervention philosophy.

The 2024 opens with wild strawberry, sour cherry, rose petal, tomato leaf, and blood orange alongside the faint earthy spice that xinomavro often carries. There is more structure here than in many rosés, with a lightly savory edge and gentle phenolic grip balancing the bright acidity. The finish is crisp, mineral, and quietly complex, making it feel equally suited to Mediterranean food or simply drinking on a warm afternoon.
