William Downie Cathedral Pinot Noir 2025 comes from the project of Bill Downie, one of the most influential figures in modern Australian pinot noir. After working in Burgundy and with producers like De Bortoli and Bass Phillip, Downie became known for a more restrained and site focused approach to Australian pinot moving away from heavier extraction and oak toward wines with transparency, freshness, and a clearer sense of place.

The Cathedral bottling is designed as a broader regional blend rather than a single vineyard wine, bringing together fruit from several cooler Victorian regions. In 2025, the blend was made from roughly 70 percent King Valley, 20 percent Yarra Valley, and 10 percent Upper Goulburn, with each site contributing a different element of structure, fruit, and acidity.

Winemaking follows Downie’s typically minimal approach. The fruit is fully destemmed but not crushed, then fermented with native yeasts in a mix of wooden and stainless steel fermenters without temperature control. Extraction is intentionally gentle with no punch downs or pump overs, and after around three weeks on skins the wine is pressed and aged in stainless steel rather than oak. The wine is bottled with only a small sulfur addition and light filtration.

The 2025 season was considered one of the strongest in recent years across southeastern Australia, with dry but moderate conditions allowing steady ripening without excessive sugar accumulation.The resulting wine reflects Downie’s broader philosophy pinot noir driven more by energy and drinkability than weight, with bright acidity, fine structure, and a lightly savory edge beneath the fruit.
