The Goring family has farmed the estate since 1743, but vines arrived much later, inspired by Pip Goring, who grew up in South Africa’s Western Cape and believed the estate’s chalk soils had serious sparkling wine potential. The first vineyard was planted in 2006 with chardonnay, pinot noir and pinot meunier, followed by a second vineyard devoted entirely to chardonnay in 2017. Today the wine operation is overseen by Richard and Kirsty Goring, with Marcus Rayner Ward leading the winemaking team.

The estate now farms approximately 12 hectares on south facing slopes with thin, flinty topsoils over deep South Downs chalk. Wiston is certified through Sustainable Wines of Great Britain and does not use herbicides. Cover crops are planted between rows, sheep graze the vineyards during winter, and grape skins, pruning material and locally produced compost are returned to the soil. The cool maritime climate and chalky, free draining soils allow chardonnay to retain high natural acidity while developing slowly through England’s long growing season.

The Blanc de Blancs NV is 100% chardonnay, made by the traditional method. Grapes are hand harvested and whole bunch pressed, with primary fermentation in stainless steel. The base wine remains on its lees for approximately eight months before blending, with 20 to 30% reserve wines, some dating back to 2009, adding maturity and complexity. After bottling, the wine undergoes secondary fermentation and spends around three years on its lees before riddling and disgorgement. Dosage is approximately 8 to 9 grams per liter, and the complete process takes roughly four years from harvest to release.

The wine is bright and focused, with green apple, grapefruit and lemon zest alongside white flowers, subtle brioche and pastry notes. Fine bubbles and vivid English acidity give it a crisp, energetic palate, while extended lees aging brings creaminess and texture. The finish is chalky, lightly saline and persistent, with citrus and delicate toasted notes.
