Nikolaihof is the oldest winery in Austria, with a history that stretches back nearly 2,000 years to the Roman era. Located in the village of Mautern in the Wachau, the estate has been family owned since 1894 and is today run by the Saahs family. Long regarded as one of Europe's great traditional estates, Nikolaihof has become synonymous with wines of remarkable purity, patience, and longevity, earning an international reputation for producing some of Austria's finest expressions of grüner veltliner and riesling.

The estate was among the first wineries in the world to embrace biodynamic farming, adopting the practices in 1971 and later receiving Demeter certification. Every vineyard is farmed without synthetic chemicals, grapes are harvested by hand, and fermentations rely on indigenous yeasts. The wines are given ample time to develop naturally, often aging far longer than required before release, with minimal intervention in the cellar. This patient approach results in wines that are defined by precision, texture, and an unmistakable sense of place.

Hefeabzug Grüner Veltliner 2023 is produced from fruit sourced across the estate's Wachau vineyards. The name "Hefeabzug," meaning "drawn from the lees," refers to the wine's extended maturation on its fine lees before bottling, which builds texture and complexity while preserving freshness. Fermented with native yeasts and aged for approximately six months before filtration and bottling, it is the filtered counterpart to the estate's Zwickl Grüner Veltliner. The result is a wine that balances youthful energy with remarkable depth and mineral precision.

The 2023 vintage is vibrant, savory, and unmistakably Wachau. Aromas of cherry blossom, citrus rind, white pepper, fresh herbs, and flint lead into a palate layered with green apple, quince, pear, and a smoky, saline minerality. Bone dry and beautifully structured, the wine finishes with lingering notes of fennel seed, wet stone, and a touch of lees derived richness. It is a superb companion to schnitzel, freshwater fish, shellfish, asparagus, or simply enjoyed on its own as one of Austria's benchmark grüner veltliners.
