A partially keeved cider is a naturally sweet, sparkling cider made by using the traditional
keeving method, which halts fermentation early to retain natural sugars and fruit flavors. This process involves reducing the nutrients in the apple juice to create a "stuck" fermentation, resulting in a fuller-bodied, more complex drink than conventionally fermented ciders without the addition of artificial sweeteners.
TRODDENVALE roughly translates to the “valley road” and is inspired by a lengthy history of visitors traveling to the cradle of Virginia’s great springs region, the Warm Springs Valley. Although this elevated valley remains sparsely populated, its roads are heavily worn by those who have come here seeking its healing waters.
Translated through our cider, we strive to preserve this valley’s treasured history, its spring water, forgotten orchards, and furthermore, we seek an opportunity for new stories to be told - of the land, the soil, and the people.
Located in a county of 4,400 people and surrounded by the George Washington National Forest, we are focused on revitalizing fruit growing for cider production in our mountain region of Virginia. We believe that dedicating our efforts to where fruit is grown and how will lead us to achieve the greatest potential in our cider.
